So I had extra lemons and extra cranberries the other day so I decided to go through the many baking books I have to find the perfect recipe for these 2 ingredients. I found this one and was delighted by how it turned out. The texture, beautiful!~ However I still need to work on this cake as the second time I made it turned into an overtly dense cake ( sigh and to think that the second time round I used actual vanilla).

This was a cake ordered by a friend for her other half's birthday. Will not go into the meaning of the cake but put it this way, the guests "got it". Had made corresponding "kotak" cookies to go with these and apparently the outshone the cake. Sorry did not have more photos of this endeavour as I left my camera in the office. Anything to beat the stress in the office. Every now and then we have everyone bring food to the office, this time was for a celebration of promotions. I made some dessert, Orange poppy seed cake, cakey brownies ( these were excellent) and some cupcakes. Dessert were finished by the end of the work day. Such satisfaction

These were for 2 different orders but for the same person. A bunch of pastel hearts which the bride took all the way to Taiping to top vanilla swirl cupcakes. So pretty. The stars were made for a birthday cake for one of her bridesmaids. I think it looks attractive eventhough there isn't buttercream on it. Love

Pity I was not able to take any pictures of a farm themed birthday I baked for just a couple of days ago, brownies, duck shaped sandwiches, farm animal cookies, cupcakes etc. It was a lot of fun. Anyways, these were a little last minute but managed to accomodate transformers cookies. All done free hand so I guess it is safe to say that they were all handmade as opposed to computer printed sugar sheets. Not too keen on those things. Anyways, hope the little guy likes them.

Agar - Agar

Every now and then I get a craving for basic pandan santan agar-agar. I found a number of recipes online on a number of variations of agar-agar. Decided to go simple and try the rainbow one first. I think these turned out beautifully - after the 3rd attempt. The consistency can be further improved but at least it is not watery like the first time I made these.

I had only 24 hours to make this cake. So it was like go home, bake the cake, make sure it cools by the morning, and early the next morning, am up early to finish the icing for this cake. I have been inspired by this cake decorater called Amanda Way in Melbourne. This cake is a reflection of that. I love the way her flowers decorate the cake so beautifully. Simple piping designs and yet so whimsical. Unfortunately I have tried googling and she does not seem to have a website.

Anyways this still can be improved but I do love the structured messiness to this cake.

A beautiful wedding, a beautiful cake. The bride, requested for a white cake but I added some pink ribbons to make it a little "warmer" as opposed to a completely white cake. Made some chocolate eclairs for the office this morning. Did not have time to make the more liquid chocolate coating for the top so just dipped them in melted chocolate. I feel just as good with a slight snap when you bite into it.Used dark chocolate this time but next time I think may try with milk chocolate. Definitely for the adults!

Problems with the Oven....

So I have concluded that my 7 year old oven is ill and it is not getting better. Repaired it a couple of times but from the feedback that I have been getting from some close friends, the problem seems to arise with the butter cakes especially, the bottom of the cake seems to be a little dense. I do apologise to anyone who have received such a cake and I am trying to rectify this problem.

Will be acquiring a new oven soon and in the meantime will be making use of my spare oven which should be fine. This is really irritating me,this butter cake thing. *Sigh*

If I may say so myself, this was the brilliant idea of my friend who recently got married, no sugarpaste, formal stuff for the hantaran but a more rustic, yummylicious multilayerd victoria sponge for her wedding hantaran. This was initially meant to be topped with strawberries but it is cherry season and I called her the other day asking whether she'd be open to having "white" cherries on the top to give it that richness. She agreed and here it is! beautiful beautiful. Heard it was a hit with the boy's family. Congratulations Nadia and Putra!

A friend had ordered a birthday cake for his 10 year old daughter. She had very specific instructions, flower shaped cake made out of vanilla sponge, layered with strawberry jam and topped with buttercream. Oh yah, pink petals a must! Seems simple enough but I have not done this before, simple as it may be. I did go to ICCA to check out the flower shaped cake pan but decided I can carve the shape out myself. Anyways, they liked it and I liked it.

Baked cookies for the office over the weekend. This is a fantastic cookie recipe. I manage to find really good imported toffee for these, expensive but so worth it! Pure butter shortbread studded with crystalised crunchy toffee and chocolate chips.

Milano Marble Cake

Moist marble cake with a milano cookie crumb and a hint of mint. This was nice but can be improved still. A unique crunch when you bite into the chocolate vanilla flavoured cake and a little burst of mint make an appearance for those with a discerning palate. Nice. pictures were taken after the cake was butchered, please excuse the crumbs.

A tall order I thought initially. I knew this was going to take awhile to make for the simple reason, I don't own a cookie cutter in the shape of the cheshire cat! Was thinking for days what shaped cutters would be closest to this face but in the end decided I had no other choice but to cut the cookie dough out one by one using a knife. Time consuming but was worth it! heard they were a hit at the Alice in Wonderland themed party.

The cookies I have made before but I had some trouble packing them this time cause they spread slightly while baking, making them bigger than usual. Could not fit them into the usual plastic bags, tried stuffing them into individual boxes but they did not look so nice. In the end settled for wrapping them in good quality cling firm and love love love the way they look!.

Chocolate Portrait

This is why baking is so interesting. This time round a friend requested for a portrait of a real cat on top of the chocolate cake. I toyed with numerous ideas to design the cat. I know for sure ( through numerous disastrous attempts) that you can't have royal icing ( which is my usual material for design) will melt on this liquid chocolate coating on the cake and so will fondant. So timing was perfect that I bought the latest book by the same authors of the "Whimsical Bakehouse" and decided to cast the image on chocolate. It was quite tricky given that I do not have a chocolate warmer. But am happy with the results given it was my first time.

My friend has 2 adorable boys and they always get to taste cakes from my office cake box. Well quite often I relieve stress at work by baking at home after work. This is fantastic cause it is a win-win situation. Me baking to relieve stress and colleagues get breakfast and tea treats. Cakes are usually not allowed to be left overnight in the office for fear of ants and cockroaches invading the office space so some get to tarpau home.

Hantaran : Sea Shells

A seashell themed hantaran for a good friend's engagement ceremony. Was a tight deadline cause she only got back from the UK a couple of days before the ceremony. I know in most tutorials, people are taught how to make seashells from silicone moulds but I did not have any. So had fun moulding these seashells from scratch. I think they look absolutely pretty. Her fiancee I heard did not want to cut the cake. I think this the shells looked nice with the champagne bubble piping at the base.

Yes together with the rubber ducky themed cakes and the next post for a wedding, all cakes were done the past weekend. Talk about making full use of the time, the soles of my feet suffered the most, all that standing and running around only gave more money to the foot massage shop. Always. A farm themed party, I had quite a bit of difficulty with the royal icing, did not seem to set too well but in the end it turned out ok. The Hi-5 cake was for the birthday boy's brother so he too gets to cut a cake. How nice.

A lazy Sunday afternoon. What was I up to yesterday? Cookie Bakeout! made a ton of fruit and nut cookies for the office. Anything to make the Monday blues go away. These are fantastic chewy cookies with coconut, cranberries, macadamias, apricots and pumpkin seeds....... I feel better already...

Attended a friend's baby shower the other day and had this huge plan to bake something different for a change but have been really busy at work.... and was too tired to bake the night before. So since I was baking a batch of cupcakes, I decided to just ride on it. My friend is not the sweety pie type so decided to move away from the pastels and try something different.

Yes have been missing in action. Not that I have stopped baking but I have been so busy both at my day job and also with baking. Was busy baking for a charity bakesale last week. We were sold out in 1.5 hours, was like a walking zombie after the event cause I only had 2 hours sleep that night.
