I am not sure whether I had overbaked this double chocolate brownie but the top seemed a bit crusted. I need to get some feedback from my friends who had eaten the brownie. It is always difficult to gauge whether the brownie is done or not. The recipe recommended the brownie to be baked for 30 minutes but when a skewer is inserted, it was still wet. Is that normal? hmmm more experimentation to come.

A tiring weekend
Just last weekend I had a huge order for a wedding. Tuna mushroom quiche, custard puffs and carrot walnut cupcakes. It was an all-niter. Was totally gone the next day but having gone through that, it was actually really nice seeing the reaction on the faces of the people I delivered the individual boxes to. The bride called me the following day and I was initially wondering is there complaint? but it was all good when she said that her mum-in-law really enjoyed the quiche and she wanted to order somemore to take back to Kedah. A nice feeling and obviously I obliged.

A special wedding
I had volunteered to bake a friends "surprise wedding" cake. Yes it was a surprise wedding party that my husband and I together with some of his friends had organised. We pulled it off and the couple was thrilled. The cake turned out ok, it was different layers of butter cake i.e chocolate chip, raisin and plain butter cake. As you can probably guess, both bride and groom are gifted musicians. It was really tiring organising the whole thing as it was held at my house but it was fun.

Yes, those of you who have read my earlier blog have seen these pictures however I thought that since my blog is supposed to encompass ALL my baking stints. This apple tart is a favourite amongst my friends as it is a mix of different textures and taste. The melt-in-your-mouth crust with a cheesy base, some slightly crunchy apples and a crispy topping of toasted almonds.

A Star!
Green Tea Cake
Celebrated mum's b'day over the weekend. In line with being healthy, I tried a new recipe "green tea cake" but I modidied it slightly. The cake turned out beautifully, a light green tea sponge which I layered with red bean paste and a thin layer of whipping cream to give it some fluff. Everyone enjoyed it!
